This garden focuses on the changing role of vegetables in the American diet over time. The garden is divided into four theme beds, containing plants typical of those grown in the northeastern United States in the colonial gardens of the eighteenth century, during the gilded age of the late 1800s, in the victory gardens of World Wars I and II, and in today's gardens, respectively. The beds are surrounded by hedges and borders of annual flowers. Visitors discover how the vegetables that reach our markets have evolved in response to new shipping, storing,and processing technologies; new plant selection and breeding techniques,and cultural changes such as migrations,wars, and ever-increasing advertising. |
